Why do ecommerce valuation multiples vary so much?

Published multiples disagree because they measure different things: some quote multiples of monthly profit, some annual SDE, some EBITDA on bigger deals, and each source samples different deal sizes. A 30x monthly-profit multiple and a 2.5x annual multiple are the same price. Convert everything to annual seller discretionary earnings and most of the contradiction disappears.
The three yardsticks
Monthly-profit multiples sound large and are popular in dropshipping listings. Annual SDE multiples are the small-business standard. EBITDA multiples belong to bigger companies with real management teams, and run higher because the earnings are cleaner. Quoting one yardstick against another produces every scary comparison you have read.
Why samples differ too
A marketplace full of small unvetted listings reports lower realized multiples than a brokerage that only accepts vetted six-figure businesses, because they sell different populations, not because one lies. Read any published multiple with two questions attached: measured on what earnings definition, and sampled from which kind of deal.
The number to actually use
For a Shopify store, price in annual seller discretionary earnings. Verified stores mostly transact between 2.2x and 3.2x on that yardstick, and the per-niche pages on this site show where each category starts inside it. Any offer or estimate you receive converts into that frame in one division.
